China Poblano Las Vegas combines Chinese and Mexican cuisine into one breakthrough restaurant experience. Chef José Andrés brings an unforgettable fusion restaurant to the Las Vegas Strip, and it’s certain to become one of your new favorite restaurants – at least, we know it has become one of ours! 

The team at China Poblano crafts both authentic dishes and an amazing ambiance. We love how the flavors of Mexico are blended with the delicate cuisines of China into dishes that are both innovative but also have a comfort-food vibe to them, like you’ve been enjoying them your entire life.

Menu

China Poblano offers an interesting menu of tasty dishes that range from spicy and bold to delicate and sweet. The menus offer food from both cuisines and dishes that are innovative fusions of the two. 

In our review, we don’t want to leave out our favorites, which include our dim sum favorites, such as When Pigs Fly (steamed buns with Chinese BBQ pork), the Golden Pearls, and Fried Wontons. 

For entrees, we love Ji Song, which are fresh lettuce cups with kung pao chicken, spicy arbol, and crispy sweet potato. The Viva China Tacos are also really good and an interesting take on such a classic Mexican dish. 

In addition to the food, there are also great cocktails and a full bar. The salt air margarita is a favorite of chef Jose Andres, and after a few sips, it was easy to see why. There’s also a smaller menu that’s only available at the bar, which is perfect if you just want to stop by for a couple of cocktails, sit at the bar, and nibble on some delicious food. 

With the exception of the bar menu, China Poblano serves the same menu for lunch and dinner. 

Signature Dishes 

We love how the signature dishes at China Poblano highlight the restaurant’s innovative concept of blending the flavors of delicious Chinese food and Mexican cuisine. Nowhere else in Las Vegas will you find carnitas and dan dan noodles, both on the list of signature dishes. 

Taco de Carnitas

If you enjoy a good taco, you will love these! Braised pork is partnered with onions, chicharron, and salsa verde for a tasty combination. 

Dan Dan Mian

This dish offers so much flavor. The whole wheat Chinese noodles are served with Szechuan ground pork sauce, toasted peanuts, cilantro, and chile pequin, plus Chinkiang vinegar. 

Twenty Vegetable Fried Rice

You read that correctly. There are twenty different vegetables in this fried rice. It’s fun to try and identify each of them while enjoying the dish. 

Mango Sticky Rice

This is a deliciously sweet and refreshing treat that compliments both cuisines wonderfully. 

Chef’s Tasting Menu

China Poblano offers delicious food and drinks at very reasonable prices, which is why it was surprising to see a chef’s tasting menu. It’s called an Experience Menu and offers small plates of the restaurant’s most popular and unique dishes, which you’re certain to find some new favorites on. 

The chef’s menu includes flavorful dishes that highlight the fusion of the two cuisines, such as starting with warm chips and salsa, served with tableside guacamole service, then cold cucumbers and chicken siu mai. 

Then the experience is rounded out with young coconut ceviche, tacos de carnitas, seasonal vegetables, Camarones al Mojo de Ajo Negro, and twenty vegetable fried rice. 

The experience is completed with a dessert of fresh churros that have been dusted with sweet cinnamon sugar. 

Dress Code

China Poblano offers a great atmosphere that’s casual and fun. You can dress casually for lunch or dinner, but there’s also no shame in dressing up a little for a night out with great food and drink. 

Our only word of advice is to not take the casual dress code too far to the casual side. Leave the athletic wear, flip-flops, and beach cover-ups at home or back in your room. 

Dress Code at China Poblano

Hours

China Poblano is serving authentic dishes with a fusion of flavors daily by chef José Andrés beginning at 11 am. During the week, the restaurant closes at 10 pm. On Friday and Saturday, dinner service is extended until 10:30 pm. Happy hour is Sunday through Thursday from 4 pm until 6 pm.
