Pros
Cons
Spago Menu
Spago Las Vegas offers a nightly dinner service and a weekend brunch. Though the menus overlap, each offers a wide selection of unique, tasty offerings inspired by the West Coast.
Brunch
Spago Las Vegas is one of the best upscale brunches in town.
They offer everything from Kaluga caviar with the traditional accompaniments or a seasonal seafood tower comprised of tasty selections such as east & west coast oysters, tuna poke, and king crab legs to a rolled French omelet stuffed with king crab, cherry tomatoes, and fine herbs.
The chilled half-dozen oysters and peppercorn-apple mignonette is a favorite starter for those who don’t want a whole tower, and if you want a light brunch, the soy-glazed salmon salad with pickled vegetables and a lime-ginger dressing is packed with flavor.
More on the lunch end of things, you can feast on big eye tuna tartare with avocado, yuzu ponzu, and nori rice crisp, house-made pizzas, and pasta, or sandwiches like the grilled chicken sandwich stacked with avocado, provolone, and sundried tomato pesto or the grilled prime burger complete with cheddar, charred onions, and special sauce.
The hanger steak ‘tartine’ topped with sauteed mushrooms, pickled shallots, and bearnaise sauce is a customer favorite as well.
If you are a breakfast fanatic, there’s something for everyone in that category, too. Try the brioche French toast topped with vanilla chantilly, toasted almond streusel, and berry compote, or the avocado toast with Fresno chilies, breakfast radishes, and cilantro.
Cocktails, Mocktails, & More
What is brunch without a cocktail or mocktail? Spago Las Vegas has tasty mocktails like the Pomegranate Delight, made with lemon, ginger syrup, orange juice, and pomegranate, or the Peach Passion Smash, a delicious combination of peach & passionfruit puree, ginger syrup, and mint.
For brunch cocktails, the Pineapple-Ginger Mojito made with Mount gay eclipse rum, mint, pineapple juice, and ginger or the Whole Lotta Love featuring Ketel one Citroen, Italicus liqueur, and lychee puree are popular choices.
You can also go with bottomless selections like DIY Mimosas, wines by the glass, sparkling prosecco, or even a bottle of Robert Weil ‘Tradition’ riesling, which is a personal favorite!
Dinner
When it comes to the dinner menu at Spago, there’s a wide range of unique dishes to choose from. For starters, consider artisanal house-made bread paired with cultured butter and the Prosciutto di Parma with burrata cheese, fresh melon, balsamic, and honey-lime vinaigrette.
You can get the seasonal seafood tower on the dinner menu as well, except it includes more, such as poached gulf shrimp, Maine lobster, Green-Lipped Mussels, East & West coast oyster, seasonal poké, apple mignonette, cocktail sauce, drawn butter, salsa verde, and lemon aioli among others.
The smoked salmon pizza with dill cream, red onion, and salmon pearls, market greens salad topped with Cara Cara orange, fennel, fresh goat cheese, spiced Marcona almonds, and a sherry vinaigrette, or the baby beet salad with Bucheron goat cheese and wild huckleberries are great for a light dinner or starter as well.
In terms of entrees, handmade pasta like the lobster ‘Fra Diavolo’ featuring king crab, spicy Pomodoro, and Calabrian breadcrumbs, house-made Campanelle spicy lamb sausage, and Thai basil, or the pappardelle bolognese made with beef and lamb ragu is not to be missed.
There are plenty of perfectly cooked proteins to enjoy as well. Colorado spiced lamb rack with eggplant curry, cucumber-mint salad, and tamarind sauce is a burst of flavor, and the roasted half Jidori chicken paired with wild mushrooms and Anson Mills polenta feels like warm comfort food. The veal ‘Wiener Schnitzel’ with marinated cucumber and fingerling potato salad is delectable, too.
For the steak lovers, order one of the fine-cut steaks grilled over White Oak and Charcoal accompanied by Farmer’s Market vegetables or the ‘Cote de Boeuf’ bone-in rib steak, a 30-Day dry-age paired with potatoes’ aligote’, mustard-peppercorn jus, and bearnaise sauce. We highly recommend also getting a side of the Di Ciccio broccolini with garlic and Calabrian bread crumbs with the ‘Cote de Boeuf.’
In addition to the several seafood selections available for starters, in pasta, and on pizzas, fresh seafood dishes are included in the entrees category, too! Get the steamed wild Alaskan halibut finished with snap peas, lotus root, chile-soy glaze, and jasmine rice or a lovely miso-marinated salmon.
Dessert
No fine dining meal is complete without a sweet treat! There are plenty of selections, including a spiked lemon Japanese yuzu cream with chiffon cake and citrus mousse or a dark chocolate souffle.
You also have to try one of the chocolate chip cookies made with Wolfgang’s secret recipe. There’s a rotating seasonal selection of sorbet and gelato as well, if that’s more your thing.
Michelin Star Chef Wolfgang Puck
