Wynn Las Vegas is set to bring a taste of authentic Texas ranching to the Strip this fall with an exciting new pop-up dining experience. The Four Sixes Ranch Steakhouse, a collaboration between Wynn and the legendary Four Sixes Ranch, will debut at the resort in September.

The pop-up concept aims to capture the essence of one of Texas’ most storied ranches, spanning over 260,000 acres in the northern part of the state. Owned by Taylor Sheridan, the creative force behind hit TV series like “Yellowstone,” the Four Sixes Ranch is renowned for its high-quality beef production and world-class ranch horses.

Chef David Middleton will lead the kitchen, offering a menu that showcases:

Tableau has a selection of juices that are freshly squeezed in-house daily. Taste an Americanized Spanish omelet with pork chorizo, guacamole, lime crema, cheddar cheese, and salsa ranchero. If you want more variety, Tableau breakfast is always a good choice. This comes with three eggs, bacon, Tableau potato, toast, an assorted pastry basket, juice, and your choice of coffee or tea. Benedicts


There are three types of eggs benedict served daily at Tableau. A traditional benedict with ham, poached eggs, hollandaise, Tableau potato, and an artisan English muffin brings familiar flavors.
The short rib benedict is braised with red wine and served with sunny-side-up eggs, Tableau potato, an artisan muffin, truffle oil, and hollandaise.
Finally, the ever-popular Nautica benedict has smoked salmon, two poached eggs, chive hollandaise, cream cheese bialy, and Tableau potato.

These entrees are brunch dishes that lean more towards a traditional lunch than breakfast. The savory entrees are priced from $26 to $48, with distinctive seasonal ingredients gracing each recipe. There are seven brunch entrees in total.
The lobster burger with gruyere cheese and chili vinaigrette on a challah bun is a customer favorite. If you’re looking for a vegan-friendly option, try the Tableau double stack with Impossible patties, chimichurri aioli, RIND carrot cheese, avocado, tomato, caramelized onions, and pickles.
