When you’re at the AAA Four Diamond Cut Restaurant, you should linger over some appetizers before diving into the main course. This not only allows you to sample more of the menu but also provides more time to enjoy the ambiance.
We want to start this off by saying that the Artisanal House Baked Bread Board is widely acknowledged as a “must.” It’s presented beautifully, and yes, the bread board alone is enough to make this one of your new favorite restaurants.
Once you get past the bread, the other appetizers include delicious bites, like the pork belly that’s maple glazed and served with roasted plums, tempura blue prawns with wasabi aioli, and Wagyu beef sashimi. It’s all just really good food.

Cut caters to true steak connoisseurs with only the finest selections of the best steak. This portion of the menu features a selection of prime beef, American Wagyu beef, Australian Wagyu, and Japanese Wagyu.
Each Cut is cooked simply and perfectly, but you can add accompaniments such as shaved black truffles, fried organic egg, roasted bone marrow, or blue cheese.
A classic entree from this selection is the American Wagyu rib eye from Snake River Farms, served with creamed spinach and tempura onions with horseradish cream.
For carnivores who maybe want a break away from steak, this restaurant offers a wonderful double-cut Colorado rack of lamb and Kurobuta pork chop.

Cut by Wolfgang Puck at the Palazzo Resort Hotel & Casino knocks it out of the park in the seafood department. Don’t get us wrong. We love excellent steak, but the seafood here is top-notch.
Whole Maine Lobster, European Dover Sole, Wild Scottish Salmon, and the chef’s daily sashimi trio offer just a sampling of the selections.

It’s impossible not to be completely satisfied at the end of dinner at Cut, but we’re never ones to pass up a glance at the dessert menu. If you can’t treat yourself in Las Vegas, then when can you? The dessert menu at this restaurant doesn’t disappoint.
We love the chocolate coffee mousse cake, the Basque cheesecake with candied kumquats and blood orange, and the strawberry shortcake. Each dessert also offers a wine pairing, which we’ve found to be just perfect.
