STK Las Vegas can be described in many different ways, but your typical daddy’s steakhouse is not one of them. STK Las Vegas is a creation of the One Group, offering a sexy, elevated steakhouse experience with the iconic STK twist. 

STK has become a known celebrity hotspot, and from our take on the menu, we can definitely see why. This is absolutely the best place for a great evening with friends or an evening with a sultry vibe with someone special. 

They even offer a live DJ during the weekend brunch to make sure the high-energy dining experience carries through to even the brunch crowd. 

Ambiance

Before we even stepped foot into STK Las Vegas, we heard that it was a high-energy dining experience. From the pictures we had seen, we were expecting the typical fine dining experience, but that’s not at all what we were in for. 

This is not your traditional steakhouse, and it offers a unique vibe dining atmosphere, unlike other restaurants on the Las Vegas Strip. 

The sexy vibe created by a blend of the sleek but warm decor, gorgeous bar, delicious food, and entertainment makes STK Las Vegas a perfect spot for a dinner for two or a celebration dinner between a group of close friends. The decor artfully combines the simplest of elements into something that’s modern and sexy. 

We do have one word of caution. STK Las Vegas brings DJs onto the scene in the later evenings, which creates this nightclub meets fine dining experience atmosphere. 

It can get loud, so if you like to hear what your dinner companions are saying, choosing to go at a quieter time will offer a better experience for you. Likewise, service seems to slow down to crawl during these peak late evening times. 

Menus

Starting Off Right

STK Steakhouse offers a nice selection of starters and small plates to begin your meal. There’s a classic Caesar that doesn’t quite seem so classic with the lemon black pepper emulsion that dresses it.

The blue iceberg salad is fresh and simple, with Point Reyes blue cheese. The tuna tartare is served with taro chips, which we thought was a nice change and complimented the dish perfectly. 

The short rib ravioli is a hands-down favorite on this portion of the menu, served with truffle au jus and shaved apples. 

Our runners-up include the bone marrow with garlic toast, bacon bourbon jam, and baby frisée lettuce, and also the yellowtail crudo with crispy garlic shiso. 

Honestly, there is enough delectable cuisine on this portion of the menu to keep us happy when in the mood for light plates and one of STK’s specialty cocktails. 

STK

There’s no question that the carnivore section of the menu at STK Las Vegas is where it shines. The superior quality of the steaks means you’re not going to be disappointed. 

Selections range from small cuts, such as the filet and Steakhouse skirt, to medium cuts that offer selections like a rib eye fillet, dry age Delmonico steak, Australian flat iron, and Japanese A5 strip. 

Though we haven’t personally ordered it, the STK board has caught our eye. This is 50 ounces of Australian Wagyu Carrera Tomahawk, served with street corn salsa, roasted bone marrow, and special sauce. 

There’s also a nice list of accompaniments for your steak. For the most part, these compliment the steaks nicely without being “too much.” Our favorites are the red wine sauce and blue butter. 

For a non-beef dish, STK Las Vegas offers a roasted lamb rack with pomegranate reduction and stuffed piquillo pepper and a Jidori chicken with confit garlic. 

Side dishes include everything from hand-cut chunky fries and creamed baby spinach to confit mushrooms and mac & cheese. 

Prices are what you’d expect to pay at a fine dining restaurant, with most entrees costing $65+. 

Seafood & Raw Bar

The seafood and raw bar selections are culinary masterpieces that are equal to the steaks. Seafood lovers will love starting with the shellfish platter that offers ceviche, oyster, shrimp, lobster, and Dungeness crab cocktail, with cocktail sauce and mignonette. Oysters on the half-shell, king crab, and jalapeno pickled shrimp are a few more chilled offerings. 

For seafood entrees, the miso-glazed Chilean sea bass is top-notch and served with these crispy shallots that add something next level. We’re also big fans of the king crab rigatoni with champagne cream sauce.

Brunch

What we love about the brunch at STK Las Vegas is that they offer something different from the usual brunch staples. 

Breakfast-style dishes include deliciousness like smoked pork belly benedict with maple glazed bacon and shishito peppers, cinnamon brioche french toast with berries and cream cheese icing, and steak and eggs with shaved truffles. 

In addition to this, the menu offers an array of dishes that you can taste and are prepared with only the freshest ingredients. 

We’re big fans of splurging on a delicious steak for brunch, especially when it comes with Wagyu umami butter and a side of sweet corn pudding. Also, don’t forget about the bottomless mimosa and bloody marys! 

STK Las Vegas offers an in-house DJ to provide entertainment during brunch, but they level this up even further on Sundays when they present their Glitz & Glam brunch with premium entertainment. 

Brunch is offered Saturday & Sunday from 9 am until 3 pm. 

Cocktail Hour

Cocktail hour at STK Las Vegas happens daily from 3 pm until 6 pm. It’s called the 777 happy hour because it happens seven days a week and offers seven menu items for $7. 

STK offers a bustling bar scene where you can enjoy small plates of jalapeno pickled shrimp cocktail, beef tartare, Lil’ burger with truffle fries, and more for $7 each. 

In addition, you can score a great deal of upscale cocktails for only $11 each. Justin Cabernet and Whispering Angel Rose are only $10 a glass. 

Chef Bio

The executive chef of STK Las Vegas is Stephen Hopcraft. He has a name and face you might recognize as a Top Chef contestant, as well as his appearance on the Food Network’s Chef Vs. City. 

Executive Chef Stephen Hopcraft has been busy creating culinary masterpieces at STK Las Vegas that result in memorable dining experiences for each guest with his trademark twist on steakhouse creations.

STK Las Vegas is located in the Cosmopolitan Casino & Resort. You can find the not-so-traditional steakhouse located on level 3 of the Boulevard Tower.

STK Las Vegas is open Monday thru Thursday from 4 pm until 11 pm. On Friday, the restaurant is open from 3 pm until midnight, and on Saturday and Sunday, the hours are 9 am until midnight.
