Raw Bar

Considering the name of this restaurant, it’s no surprise that the Raw Bar is one of the most popular parts of the menu.

Yellowfin tuna tartare with yuzu kosho, avocado purée, and sesame seeds have light flavors. The hamachi pizza with yuzu aioli, heirloom tomato, red onion, chives, cilantro, and spicy ponzu packs a surprising amount of heat that’s complimented by the fresh veggies.

There are six items in this part of the menu, with prices ranging from $18 to $24.

Veggies & More

Add more veggies to your meal with a selection of Brussels sprouts, asparagus, seasonal mushrooms, sweet corn, and fingerling potatoes. While these might sound like vegetables you prepare at home, they’re full of flavor that will leave you excited for the next bite!

Corn is served with spicy mayo, cotija cheese, and lime salt. Brussel sprouts are prepared with sweet soy, aged balsamic, and orange segments. Safe to say, the way Sugarcane prepares its veggies is not the same way you prepare them on a regular night at home.

Veggie sides are $13 or $14, depending on which vegetable you choose.

Crispy Rice

There are three types of crispy rice offered, each costing $19.

The first is spicy tuna crispy rice with chives, Japanese spices, and spicy aioli. Next is the Hamachi crispy rice with Japanese spices, chives, and truffle oil. Finally, there’s torched salmon crispy rice with togarashi, ponzu, sriracha, spicy mayo, and crispy shallots.

The beverage selection is extensive and offers tons of variety. Order red, white, or sparkling wines by the bottle or sip a freshly poured draft beer. There’s a handful of bottled/canned beers available that are produced in California or Nevada too.

Try the Spice of Love or Strawberry Balsamic for a vodka-based cocktail. The Mexican Lemon Drop makes tequila taste better than ever, while the Garden Essence cocktail highlights premium gin.

Along with the wine, beer, and cocktails offered at Sugar Raw Bar & Grill, they carry a collection of artisanal rum from around the globe.

Dessert

A good dessert is one of life’s simple pleasures that we all deserve to indulge in from time to time. At Sugarcane, there are plenty of mouth-watering desserts to choose from.

Warm cinnamon sugar churros served with Mexican hot chocolate are the perfect wintertime treat. If you want something a bit lighter and brighter, try the key lime donuts with kaffir lime sugar and meringue or housemade sorbet with yuzu, mango, and strawberry.

Embrace your Vegas experience with an Elvis-inspired dessert called The Full Elvis. This includes a whole milk waffle topped with PBJ, caramelized banana, chantilly cream, and all the trimmings. If you’re a chocolate fiend, the Nutella sundae with Nutella ice cream, a Nutella brownie, and carmelized popcorn & banana will be the perfect fit.

There are also two dessert-style cocktails on the menu, The SUGARCANE Grasshopper with the perfect blend of mint and chocolate flavors or the Deja Brew with espresso and Mexican chocolate.
